BARBADOS CHERRY JAM

Ingredients:
2 kg Cherries (1 l juice)
1 kg sugar
lemon juice or citric acid

Method:
Wash cherries. Boil slowly with a little water. Strain through a cloth. Boil the juice until it is reduced one-third in volume. Add sugar and boil a further 8 - 10 minutes. Pour into clean, hot jars.
