1. Remove the white arils from six firm open akee pods.
2. Simmer for five minutes; pour off the water. Add salted water and cook gently until tender.
3. Strain and mash until they look like scrambled eggs. Add any of the following: grated cheese, roasted and chopped cashews, peeled and chopped tomatoes, mashed anchovies, or salt and pepper to taste.
4. Pile the akee mixture on toast and garnish with finely chopped parsley.
