1 Tbl flour
1 Tbl minced celery and onion
1 Tbl butter or margarine
3 cups water or stock
1 tsp salt
1½ tsp acid
1 newly ripe avocado (1 lb. flesh)
Heat fat slowly, stir, sauté celery and onion, stir in flour.
Add liquid gradually, stirring continuously. Add salt and acid.
Peel and crush flesh of avocado. Stir into the mixture.
Ensure that flour is cooked. Check taste, pass through a plastic sieve.
Serve hot, or as dressing on salads when cold.
