289 ml apricot puree
15 ml brandy
1 tsp Curacao
sugar to taste
Remove flesh from avocadoes, peel mandarines, remove all pith and cut into segments.
Dice bananas and avocadoes, pour on the brandy, Curacao and sugar and chill.
Blend with apricot puree and place in parfait glasses.
Pipe over with whipped cream, decorate with cherries and sprinkle with nuts.
