a 1.5 kg chook (or similar amount of chicken pieces)
2 Tbl butter or margarine
2 Tbl flour
¾ cup dry sherry or dry white wine (or make some stock with a cube or two)
1¼ evaporated milk
1 large avocado
salt and pepper
Cut chook into serving pieces. Melt butter, add chook, skin side down and fry gently till brown all over.
Fry another 15 minutes, then add sherry, cover and simmer until pieces are tender. Remove pieces to warm platter.
Add flour, salt and pepper to pan, stir for two minutes. Add milk gradually and stir until boiling, remove from heat.
Peel and slice avocado, add to pan, replace chicken pieces, cover and simmer only until re-heated.
