Ingredients:
3 doz large Cavendish bananas (if using sugar bananas, they must be very ripe)
2 large onions
3 cups vinegar
1 pkt dates
3 cups sugar
1 cup chopped walnuts
1 tsp salt
1 tsp cinnamon or mixed spice
1 large knob root ginger grated
1 tsp chilli chopped
5 cloves garlic.
Method:
Mash bananas and put into saucepan with chopped onion, ginger, salt, spice, chilli and garlic. Simmer slowly ½ hour.
Add sugar, continue to simmer till thick, about 1½ hours. This makes a delicious sandwich spread etc.
Bottle and seal while hot.
