BAKED BANANA FISH

Ingredients:
2 large cooking bananas
1 chopped tomato
2 pieces fish fillet (½ lb or 240g)
1 small chopped onion
1 cup coconut cream
salt to taste
chillis or shake of pepper
Softened banana leaf

Method:
1. Peel and slice cooking bananas lengthwise. Place on softened banana leaf.

2. Add fish and rest of ingredients.

3. Wrap everything in the banana leaf and place either on the BBQ or place in a weber oven for approximately 1 hour.

NB. Half-ripe bananas give a much better flavour. Two servings.
