Ingredients:
125g cottage cheese
1 tsp vanilla
2 Tbl honey
¾ cup fresh mango
1½ cups wholemeal SR flour
4 egg whites
1 tsp bicarb of soda
1 ripe banana
Method:
Place mango and cottage cheese in food processer and blend until creamy.
Beat in 1 egg white at a time. Add banana, vanilla and honey. Mix well.
Sift flour and bicarb of soda together and fold the blended mixture through gently.
Cook in a ring tin at 350°F (180°C) for 35-40 minutes.
