PAPAYA-BANANA CAKE

Ingredients:
Topping
1 Tbl margarine
½ cup brown sugar
1½ cups sliced ripe papaya
1 ripe banana
½ cup walnut pieces
Cake Batter
1½ cup flour
2 tsp baking powder
100 g margarine or butter
½ cup brown sugar
1 egg
1 tsp vanilla
½ cup water

Method:
Melt margarine in an 8x8 square pan. Sprinkle brown sugar over margarine. Arrange sliced fruit over sugar in pan and sprinkle walnuts on.

Prepare cake batter: Mix dry ingredients together, then beat in the egg, water and vanilla. Pour over fruits. Bake at 350ºF for 30-40 minutes or until top springs back when touched lightly.

Invert at once onto serving plate. Carefully remove pan and replace topping if necessary.
