Ingredients:
2 ripe plantain bananas
30 g butter
1 Tbl honey
1/3 cup cream
1¼ tsp cinnamon
1 cup orange juice
2 tsp cornflour
Method:
Peel bananas, cut in half lengthwise and place in ovenproof dish.
Sprinkle with cinnamon. Cut butter in little pieces and sprinkle on top. Bake in moderate oven for 1 hour.
Blend cornflour with ¼ cup orange juice. Put remaining orange juice and honey in a saucepan to boil; when boiling stir in cornflour mixture. Stir until sauce boils and thickens.
To serve, pour orange sauce over bananas and top with whipped cream.
