BLACK SAPOTE LEATHERS

Ingredients:
black sapote
pawpaw
bananas
low fat vanilla yogurt
ground nutmeg
desiccated coconut
rum essence
crushed nuts

Method:
Puree equal amounts of fresh Black Sapote, pawpaw, bananas and low fat vanilla yogurt.

Add to taste: ground nutmeg, desiccated coconut, rum essence.

Mix all together into a smooth consistency (not a runny kind).

Spread on oiled plastic liners of a fruit dryer, approximately ¸" thick, sprinkle with mixed finely-crushed nuts and set dryer at 55°C.

Dry leathers for 10-12 hours.

When ready, leathers will come off easily from the liners and can be rolled up while still warm, then cut into desired pieces.

Place in air tight containers in the fridge, or freeze.
