BLACK SAPOTE MUFFINS

Ingredients:
1 cup wholemeal plain flour
½ cup wholemeal SR flour
1 tsp bicarbonate of soda
1½ cups unprocessed bran
¾ cup raw sugar
½ cup chopped walnuts
2 black sapote, peeled, seeded and mashed
125g melted butter
1 egg
1 cup milk soured with 1 tsp vinegar

Method:
Place sifted flours, soda, sugar, bran and nuts into a bowl. Add the rest of the ingredients and mix well but do not beat.

Place into greased muffin tins and bake in a moderately hot oven for about 30 minutes or until cooked.

Makes 12 large muffins.
