BLACK SAPOTE SWIRL CAKE

Ingredients:
2 eggs
½ cup olive oil
½ cup black sugar
1 Tbl golden syrup
½ tsp vanilla essence
2 cups SR flour
large black sapote, creamed
a little milk if needed

Method:
Beat eggs well. Add olive oil, black sugar, syrup and vanilla, mix well.

Fold in sifted SR flour gently.

Then lightly stir in creamed black sapote pulp, only enough to give a streaking effect.

Pour into greased tin and bake in moderate oven till cooked. Check with straw.
