2 cups S.R. flour
½ cup sugar
3 oz. butter
½ cup milk
1 egg
1 cup black sapote
½ tsp bicarbonate soda

Sift flour and salt. Add sugar in bowl. Rub butter into flour and sugar mixture until well combined. Dissolve bicarbonate of soda in milk, add to flour mixture then add beaten egg. Add black sapote until thoroughly blended.

Put in a bread loaf tin about 10 x 6. Bake in moderate oven for 50-60 minutes or until it leaves sides of dish. Serve with butter. Keep in airtight tin. The flavour of the black sapote comes through after 2 days.
