Ingredients:
BASE:
30 g butter
1 Tbl honey
1 cup rolled oats
¼ cup coconut
FILLING:
250 g cream cheese
250 g cultured sour cream
½ cup sugar
2 Tbl plain flour
2 eggs
425 g apple (tin)
1 cup mashed, ripe breadfruit
¼ cup sultanas soaked in sherry
grated rind of 1 lemon
Method:
Melt butter with honey. Stir in rolled oats and coconut. Press into oiled pan. Bake 15 min. at 180° (350°F) until brown.
Beat cream cheese, sour cream and sugar together, then add flour and eggs. Mix well.
Then add cooked (or tinned) apples, breadfruit, soaked sultanas and lemon rind. Pour into base and bake at 180°C or 350°F for 45 minutes, until firm.
