½ cup margarine
1½ cups raw sugar (or 1¼ cups white sugar)
½ tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 cup ripe breadfruit pulp, mashed
¼ cup milk
Soften margarine, add sugar and cream until fluffy. Add vanilla and eggs, one at a time.
Sift dry ingredients together and add alternately with mixture of breadfruit and and milk.
Turn into greased loaf pan and bake at 325ºF 45 minutes or until done.
If desired, glaze with 1 cup icing sugar blended with either 2 Tbl milk or 2 Tbl lemon juice.
