BREADFRUIT SOUP II

Ingredients:
1 breadfruit
1 litre of chicken stock
juice of one lime
1 tsp coriander, salt, pepper
2 ml cream
1 ml sherry

Method:
Bake the ripe breadfruit in an oven at 175ºC. When cool enough, remove flesh from skin.

Add breadfruit to the litre of heated chicken stock, season with salt, pepper, coriander, add lime juice, blend all in a blender and reheat but not to boiling point. Before serving stir in cream and sherry.
