BREADFRUIT TEA-CAKE

Ingredients:
8" very ripe breadfruit
4 eggs
1 cup mixed fruit
½ cup chopped dates
1 handful chopped nuts
Juice and rind (grated) of 1 orange
Cinnamon
wholemeal flour
pinch of salt
Sachet of yeast

Method:
Take core and skin from breadfruit.

Mix in bowl with other fruits, eggs, sugar, juice and cinnamon. Add wholemeal flour.

In small bowl, place sachet of yeast, 1 teaspoon sugar and half cup of warm water. When yeast has risen, add to mixture in large bowl. Add more flour if necessary to make "cake" consistency.

Bake at 350°F till cooked.
