Method:
Canistel Cake
Add the mashed pulp of 2 medium canistels to a basic butter cake recipe. You may want to add more shortening to make a moister cake, and perhaps less sugar.
Canistel Scones
Use a basic scone recipe. Work the mashed pulp of 1 or 2 medium canistels into the flour along with the butter. Use a little less milk than usual. Delicious served with lemon or lime curd for afternoon tea.
