As the picking of the fruit is time-consuming, may I suggest an easier way. I used Bilimbi fruit that had softened sufficiently to squeeze out the acid juice.
I then made a delicious jam using a very small amount of water and equal quantities of chopped, squeezed-out Bilimbis and sugar. I put the juice on a pot plant.
I also recommend using the squeezed-out Bilimbis in vegetable curry and such like dishes. Bilimbi jam conserve is very tasty as a spread on savoury biscuits.
