CARAMBOLA CORDIAL

Ingredients:
10 medium sized sweet carambolas
¼ cup honey

Method:
Trim the ends of the carambolas and the tips of the ridges. Thinly slice the fruit (remove seeds for planting) into a glass bowl and pour on the honey. Let stand overnight in the fridge. Drain the liquid into a clean bottle which can be stored in the fridge for a number of days. Use the liquid in normal cordial proportions with chilled water for a refreshing drink. The addition of a little lime or lemon juice will give the cordial a pleasant tang. The drained fruit can be dried for use in cooking or as a sweet.
