CARAMBOLA JAM II

Ingredients:
1 kg ripe carambola fruit
750g white sugar
1 cup water
1 Tbl finely grated ginger

Method:
Wash fruit and cut off wings, remove seeds and slice thinly. Place fruit and water in pan and slowly bring to the boil while stirring. Boil for 15 minutes.

Add the sugar and ginger and simmer after sugar has dissolved for another 30 minutes. Skim off scum as it rises. Fill hot, sterilized jars, seal and store in a cool place.
