CARAMBOLA PIE

Ingredients:
2 cups carambola sections*
1 cup sugar
3 Tbl Minute Tapioca
½ tsp cinnamon
¼ tsp nutmeg
1 tsp lemon juice

Method:
Mix ingredients together and place in a 9" unbaked pie crust. Dot with 1 Tbl butter. Cover with top crust. Bake at 425 º for 40 minutes.

* Cut top and bottom from carambola. Pare skin from ridges. Cut sections from ridges without cutting into seed core. Squeeze juice from seed core after all five sections have been removed.
