FIVE CORNER RELISH

Ingredients:
2 lbs prepared five corners (carambola)
2 lbs onions
1 rounded tsp whole cloves
20 fresh or dried birdseye chillies (or to taste)
1 rounded tsp ground or fresh ginger
1 rounded tsp cinnamon
2/3 lb. brown sugar
400 ml vinegar

Method:
Slice carambolas and onions and cover with water containing one ounce of salt. Soak overnight.

Discard the soak water and place in saucepan

Add the remaining ingredients and bring to boil.

Simmer for about 2 hours or until fruit and vegetables are soft.
