CASSAVA CAKE I

Ingredients:
2 cups coarsely-grated cassava
1 egg lightly beaten
½ cup sugar
2 Tbl melted butter/margarine
1 coconut milk

Two alternative toppings:
TOPPING 1: Cook ½ cup brown sugar and ½ cup coconut milk over low-medium heat, stirring until thick (approx. 5 min.).

TOPPING 2: Blend 1 Tbl flour and 1 can (150z) condensed milk in a pot. Cook, stirring, over medium heat until thick (approx. 5 min.). Stir in a small amount of syrup to a beaten egg yolk. Stir back yolk mixture to the simmering syrup. Cook for about 2 minutes more. Spread on top of the cooked cassava.
