SAVOURY CASSAVA BAKE

Ingredients:
1 kg cassava peeled, grated and washed
1½ cups coconut milk
1 egg lightly beaten
1 clove garlic
1 hot chilli
1 onion
1 red capsicum
½ cup fresh or frozen green peas
100g grated Parmesan cheese
100g grated cheddar cheese

Method:
Chop garlic, onion and capsicum and gently fry in a little olive oil.

Add peas and cook for a minute. Add to rest of ingredients and place in a buttered baking dish.

Cook for 30 minutes in a moderate oven. Sprinkle with extra cheese and cook for a further 15-20 minutes.

Serve hot or cold.
