SWEET CASSAVA BAKE

Ingredients:
1 kg cassava peeled, grated and washed
1½ cups coconut milk
1 egg lightly beaten
½ cup sugar
½ cup sultanas
250g ricotta cheese

Method:
Mix all ingredients, place in buttered baking dish, sprinkle with ground cinnamon.

Cook in a moderate oven for 30 minutes.

Sprinkle grated cheddar cheese over the top and cook for a further 15-20 minutes.

Serve hot or cold.
