KUMQUAT BREAD

Ingredients:
1 cup kumquat puree
½ honey or 1 cup sugar
2 eggs
½ cup milk
3 Tbl oil
1 cup walnuts
½ currants
2 cups whole wheat flour
1 Tbl baking powder

Method:
Butter a 5' x9' loaf pan and cover with rolled oats.

Wash, halve and seed enough kumquats to produce 1 cup puree in a blender or processor. Mix pureed fruit with honey or sugar, beat in eggs, oil and milk.

Combine dry ingredients in bowl, then quickly and briefly mix in the fruit mixture. Spoon batter into pan, and bake in 350ºF oven for 75 minutes. Cool in pan 10 minutes.

(NOTE: Calamondins may substitute for kumquats).
