Ingredients:
250g butter
½ cup castor sugar
2 Tbl lemon juice
grated lemon rind
2½ cups of plain flour
Method:
Beat butter, lemon rind and sugar until creamy, add juice then stir in flour.
Take teaspoonfuls and roll into balls. Place on greased baking trays and press down with a fork.
Bake in a moderate oven for 20-25 minutes or until lightly coloured.
