2 Tbl SR flour
1 cup milk
½ cup castor sugar
2 eggs separated
1 Tbl butter, softened
Preheat oven to 180°C. Grate the rind from the limes, then squeeze the juice.
Beat butter and sugar until creamy, add flour.
Add the lime juice, rind, milk and beaten egg yolks.
Beat the egg whites until stiff, then fold gently through mixture.
Pour into lightly greased baking dish and bake about 20 minutes.
