500 gm fresh jakfruit seed
3 Tbl vegetable oil
pinch of cumin seed
pinch of mustard seed
½ pinch of fenugreek seed
2 heaped teaspoons curry powder
salt to taste
½ medium-size onion
2 cloves(portion) garlic
Boil jakfruit seeds for 30 mins on normal stove or 10 mins in microwave. Remove hard shell completely and as much of the brown soft shell as possible. Cut seeds into three portions and now they are ready to cook.
Cut garlic and onions in small portions.
Place oil in a thick base pot or pan, add garlic, onions, cumin seeds mustard seeds and fenugreek seeds in hot oil and heat until brown. Place curry powder in hot oil for 30 seconds.
Add jakfruit seeds and stir everything thoroughly until well-mixed. Add salt.
Cook slowly on normal stove for 35-40 mins having added ½ cup water. You can add more water as desired and stir if seeds stick to base of pot.
Now you have a delicious jakfruit seed curry likened to the taste of potato curry. Remember to add salt and water as required.
