LYCHEE SALAD

Ingredients:
1 cup lychees
1 cup creamed cottage cheese
1 Tbl chopped preserved ginger
mayonnaise, to taste
½ cup shelled pecans

Method:
Peel and remove seed from lychees. Mix ginger with cottage cheese. Add mayonnaise and lychee pulp and mix.

Serve on lettuce. Garnish with grated fresh coconut.
