Ingredients:
1¼ cups of mashed Mamey sapote
1¼ cups of coconut milk
3 egg yolks
¼ cup of brown sugar or sugar to taste
1 tsp cinnamon
1 tsp ginger
¼ tsp nutmeg
¼ teaspoon of ground cloves
Method:
Mix all the ingredients in a blender and blend until the Mamey Sapote is smooth and creamy, and pour into a pastry-lined pie pan.
Brush the top with beaten egg and sprinkle with castor sugar and add shredded coconut on the top.
Bake for 45 to 55 minutes at 425°F.
