mamey sapote (large dice)
firm tofu (large dice)
fresh pineapple (diced)
sweet chilli sauce
Toss ingredients with a little sesame oil (preferably in a wok) add a sprinkle of sesame seeds. The idea is just to warm the ingredients through with very slight brown colour.
Mix together sweet chilli sauce and curry powder. Add to wok while over low heat. Use just enough to coat the ingredients. Toss gently for 1 minute then serve onto a bed of mixed salad leaves.
Sweet chilli sauce is usually available in the supermarket. I use a brand called A & T in a 750ml bottle. The curry powder I used is now available in the supermarket also. It is in a small green tin by "Keens" called Gourmet Thai Green Curry Blend.
