Ingredients:
3 medium mameys
2½ cups sugar
3 cups water
Method:
Remove outer skin of fruit, being careful to take off all of the inner white membrane. It puckers the mouth the way persimmons do. Cut the pulp from the seed in as large slices as possible.
Make a light sirup of sugar and water and cook pulp in this from 10 to 15 minutes. Skim off foam from the top as this is very bitter.
Serve cold.
