1 small chicken
2 large onions, finely sliced
2 large tomatoes, sliced
2 carrots, sliced
1 cup chopped dark green leaves
2 Tbl cooking oil
3 cups mango sauce (see other recipe)
1 cup water
Salt and pepper to taste
1. Cut the chicken into serving portions and wash well.
2. Fry the sliced onions in oil for 5-10 minutes. Add the chicken pieces and cook for a further 5 minutes.
3. Add the tomatoes, carrots, mango sauce and water and cook for 45 minutes, stirring occasionally.
4.. Add the chopped green leaves and cook for a further 5-10 minutes. Add salt and pepper to taste.
5. Serve hot with cooked taro, sweet potato, breadfruit or rice. Six servings.
