MANGO JAM II

Ingredients:
6 large med. ripe mangos
125g dried apricots
60g preserved ginger
3 cups water
1 cup lemon juice
sugar

Method:
Peel and chop mangos, chop ginger and apricots. Place into saucepan with water and lemon juice. Bring to the boil and reduce heat and simmer uncovered approximately 30 minutes or until fruit is soft.

Remove from heat. Add one cup of sugar to 1 cup of fruit pulp. Bring to the boil and boil to setting stage.
