Ingredients:
½ cup butter
¾ cup sugar
3 eggs
3 cups flour
1 level tsp baking soda
1 cup ripe mango pulp
½ cup chopped macadamia nuts
1 Tbl lemon juice
Method:
Cream butter and sugar until fluffy, add beaten eggs, mix well.
Sift flour and baking soda together.
Mix mango pulp and lemon juice, now add alternately to egg mixture, a little at a time, then add in the nuts. The mixture should be sticky and elastic.
Bake in a greased loaf pan for 1 hour at 180ºC.
