MANGO AND MACADAMIA ICE

Ingredients:
1 litre vanilla ice cream
1 cup cream
1 cup mango puree
100g toasted macadamia nuts
Crisp wafers, optional.

Method:
Soften the ice cream slightly (not sufficiently to melt) in a large bowl. Fold through the lightly whipped cream and mango puree.

Reserve some whole macadamia nuts for decoration. Roughly chop the rest and fold through the mixture. Cover ice cream with freezer wrap placed directly on the surface to prevent large ice crystals forming.

Return to freezer until firm enough to scoop. Serve with crisp wafers.
