125g canola margarine ½ cup brown sugar
1 tsp vanilla essence
1 cup milk
2 cups wholemeal S.R. flour
flesh from 1 fresh mango, cubed
The Crumble Mix
50g Canola margarine
¼ cup brown sugar
¼ cup plain flour
¼ cup oats
¼ cup macadamia nut crumbs
Place all ingredients for crumble mix in food processor and process until just crumbled, set aside.
Cream margarine and sugar. Add eggs and mix until smooth.
Add vanilla and milk. Mix well. Add dry sifted ingredients.
Fold in mango and half the crumble mix.
Put into greased 20cm (8") baking dish, top with remaining crumble mix. Bake at 190°C for 1¼ hours.
