MANGO MAYONNAISE

Ingredients:
300 g sour cream
1 tsp grated green ginger
1½ tsp fresh lemon juice
large fresh mango, finely chopped
1 tsp finely grated lemon rind

Method:
Combine all ingredients and mix well. For a very smooth texture, process mayonnaise for a few seconds in the food processor. To serve with any cooked seafood. Delicious with shellfish and especially good with smoked trout.
