MANGO MUFFINS

Ingredients:
400g plain wholemeal flour
1 Tbl baking powder
120g rolled oats
Y½ cup brown sugar
3 small mangos, peeled and diced
1 egg
1 Tbl vegetable oil
½ cup milk

Method:
Preheat oven to 180°C, coat muffin tin with cooking spray.

Sift flour and baking powder into a bowl [return husks to bowl].

Reserve 2 Tbl of oats, stir the remaining oats, brown sugar, mango, combined egg, oil and milk in quickly.

Pour into prepared tins, bake for 30 minutes till cooked thoroughly. Remove to cool on rack.
