125g butter, softened
¾ cup brown sugar
1 tsp vanilla essence
½ cup S/R flour
¾ cup dried apricots* chopped and soaked in 1 cup water for 20 minutes
1/3 cup coconut
1/3 cup rolled oats or wheatgerm
1½ cups cornflakes
*Note: I used home-dried fruit in place of the apricots.
Cream butter and sugar, add vanilla and egg, beat well.
Stir through remaining ingredients and mix well.
Place spoonfuls of mixture onto greased trays and bake in an electric oven at 200°C for 15 minutes or fan-forced oven at 180°C for 12-15 minutes or until brown.
