EMBLICA PICKLE

Ingredients:
1 kg Emblica fruits
150 g salt (to taste)
15 g red chillies (powder) (to taste)
10 g turmeric
10 g cumin
10 g black pepper
300 ml oil

Method:
Healthy and unblemished fruits are washed and cooked in boiling water for 10 minutes.

The fruits are cut into pieces and allowed to cool.

About half the quantity of oil is put into an aluminium container and heated. The fruit pieces are then fried in oil and salt and other ground spices are mixed in.

Cool pickle is filled into wide-mouth bottles and remaining oil is added. Pickle would be ready in 5 - 6 days.
