24 Saviordi biscuits
½ cup sherry
3 Tbl water.

500g cottage cheese
1/3 cup sugar
1 tsp. gelatine
1 Tbl boiling water
½ tsp grated lemon rind
1 Tbl brandy or sherry
and fruit in season

Line a deep 22x9cm loaf tin with lightly greased foil, place layer of biscuits in base, brush generously with sherry (or brandy) and water mixed, reserving some for the top.

Puree cottage cheese and sugar until smooth, dissolve gelatine in boiling water and cool, add to cottage cheese with sherry or brandy mix and lemon rind.

Spread 1/3 mixture over biscuits, arrange 1 layer of fruit, another layer of cottage cheese mixture, then fruit, then cottage cheese mixture.

Press remaining biscuits over top and brush with remaining sherry or brandy mixture. Chill well at least 6 hours. Turn onto serving plate, before serving.
