TROPICAL FRUITY SALAD

Ingredients:
1 head of lettuce
1 cup fresh diced pineapple
1 cup pomelo segments
1 cup mandarin segments
1 sliced kiwi fruit
½ cup grated carrot
½ cup diced tomato
½ cup crushed macadamia nuts
1 cup small, diced bread croutons

Method:
In a bowl, shred lettuce, add other ingredients and toss well. Add the following dressing:

2 Tbl olive oil
juice of large lemon
salt to taste and crushed whole peppercorns
1 tsp of fresh crushed mint.

Delicious served with grilled fillets of barramundi.
