RED PITAYA CREAM FLAN

Ingredients:
prepared pie flan, baked
1 cup pitaya cactus flesh - squashed
1 Tbl gelatine
½ cup castor sugar
½ cup hot water
300 ml cream - whipped

Method:
Put hot water in a dish, sprinkle on gelatine. Squash pitaya cactus flesh and stir fruit puree and sugar into dissolved gelatine.

Whip cream and fold in with other ingredients. Pour into pie crust. Chill in fridge until firm.

The mixture could also be spooned into dessert glasses, chilled and served with custard or cream.
