ROSELLA SAUCE (SAVOURY)

Ingredients:
1 kg rosellas
½ tsp salt
2 diced apples
3 - 4 cloves garlic (crushed)
1 cup sugar
¼ tsp cayenne pepper
½ tsp allspice (pimento)
2 diced onions
4 - 5 slices green ginger (finely chopped)
half cup vinegar

Method:
Separate husks from seed pods. Just cover seed pods with water and boil until soft (15 mins). Strain and reserve liquid. Discard pods.

Put this liquid, husks and other ingredients into pan and simmer 30 mins.

Rub through a sieve or vitamize ( Be careful if mixture is hot).

Bottle and label.
