TROPICAL FRUIT DELIGHT

Ingredients:
1 pineapple
1 cup strawberries
1 orange
1 small pawpaw
1 banana
1 avocado
225g cream cheese
chopped walnuts

lemon-honey dressing
1 tsp grated lemon rind,
1/3 cup lemon juice,
¼ cup honey,
¾ cup salad oil,
¼ tsp salt

Method:
Halve pineapple lengthwise, cutting through leaves as well. Cut around edge with knife and remove pulp. Remove core, slice fruit, save shells.

Wash strawberries. Pare and section oranges, cut pawpaw in half and remove skin and seeds and slice. Peel and slice banana. Cut avocado in half and remove skin and seed and slice.

Combine all fruits and heap into pineapple shells. Shape cheese in balls and roll in walnuts.

Arrange on serving plate with pineapple. Serve with lemon-honey dressing.

Dressing: Combine lemon rind, lemon juice, honey, salad oil and salt. Place in covered jar and shake well to blend.

Sprinkle macadamia nut halves on top of fruit.
