½ cup wampi puree (pulp and skins, squeeze seeds out)
1/3 cup sugar
2 tsp gelatine
grated rind of ½ orange or lemon
1½ Tbl orange or lemon juice
2 egg whites, beaten well
¼ cup yoghurt
Dissolve gelatine in ½ cup warm water. Stir in sugar and rind, wampi and juice.
When sugar is dissolved, chill until syrupy.
Add to stiffly beaten egg whites, together with yoghurt, and whip until thoroughly blended.
Chill at least four hours before serving.
